Spring Menu: Sneak Peek

On Saturday, March 25, Dante hosted a handful of Omaha’s top food bloggers and influencers for a Private Tasting of our Italian Spring Menu. Featuring the freshest spring vegetables, meats, and Italian wines, Chef Nick Strawhecker served up a seasonally inspired eight-course menu complete with wine pairings from Dante Sommelier, Adam Weber, IWP. Our tasters were treated to Saturday afternoon of Private Dining at Dante to sample an array of the latest, hyper-seasonal culinary delights from Chef Strawhecker’s kitchen. The Spring inspired, rustic Italian menu featured a multitude of snacks, including: Fried Potato Puffs & Fonduta, Pistachio Flatbread with fresh House-made Ricotta Cheese, Marquez & Kale, Bufala Mozzarella, Prosciutto & Arugula Flatbread, Flax Cracker Crostini with Raspberry and Capocollo, and Fried Artichokes with Bottarga & Dill.  Directly after the snack offerings, the Primo course of Beet Tortellini and Arugula was served followed by the Secondo course of Wood-roasted Nebraska Waygu & Sweet Potato. The tasting finished with the Dolce course featuring Dante’s signature Butterscotch Budino.

Dante Sommelier and IWP, Adam Weber hand-picked wine pairings from a variety of light, spring and summer wines from various Italian regions.  Sustainability and innovative wine production practices were key markers for the wines selected for this event. The wines included the N.V. (non vintage) “1937” Spumante Brut Rosato, a Rosé also featured in Omaha’s first Virtual Pop-up Wine Tasting Event with Gaia Buccarelli from Northern Italy’s Santa Guistina Winery. Other featured wines included, Ricci Curbastro “Franciacorta Brut” Franciacorta, D.O.C.G., 2014 Brezza “Chardonnay” Langhe, D.O.C., 2015 Raineri “Elfo Bianco” Piedmont, V.D.T., and 2014 Paolo Bea “Santa Chiara Bianco” Umbria, I.G.T.
